Send Emails to Create New Posts

We have an event where we’d like participants to be able to send an email during the event, and have a news post created on the site (EE3) with the content of their post. Any ideas on how to do this aside from manually creating the posts upon receipt of the email? Participants will be on a long distance yacht race, access to internet is limited, via satellite, and slow. So their ability to send a simple text email is possible, but not likely they can access a website, login, and submit a post that way.
