See this bug report.
The Data Type dropdown is disabled when I try to create a new Grid var in Low Variables. When editing an existing var, the dropdown is enabled as expected (and only showing the compatible types, as expected too).

Sorry, Low, I think I can see how that could be happening in your add-on, should be fixed in the next build. I think we should be getting out one more DP build this week.
