Add the entire EE site to SVN, including the templates (save them as files). I work with every EE site in this way. Since EE stores so much in the database, you’ll want to also do a regular db dump and store that file in SVN, too.

You can also add versioning of templates (but they’re in the DB) and versioning of entries.

However, one big issue with EE in SVN, as Ryan says, you must be backing up copies of the database as well, or SVN is CMS/uploaded files only, with no DB.
